Parmigiano Reggiano is a hard cheese without any additives or preservatives. It is made with milk coming from cows whose feeding mainly consists of forage from the area of origin. Since it is a PDO (Protected Designation of Origin) product, its production area includes only the provinces of Parma, Reggio Emilia, Modena, Bologna and Mantova.
In the 70s, Eugenio Dalla Bona began to age and trade this cheese with a secular history. The origin of this cheese can be traced back to when the monks of Parma and Reggio Valley discover it as a way to preserve their milk.
